Creamy Coconut Quinoa Oatmeal

This creamy coconut oatmeal is perfect for if you are looking to add some more protein to your breakfast, especially when oatmeal on its own is not enough.
- 1/2 cup oats
- 1/4 cup quinoa
- 1/2 cup water
- 3/4 cup coconut milk
- 1/2 tsp vanilla extract
- 1 1/2 tsp date sugar or sweetener (maple syrup for the sweet tooth)
- Your choice of toppings
Combine oats, quinoa, water and coconut milk in a saucepan and bring to boil.
Reduce to simmer and cook covered while stirring occasionally until most of the liquid is absorbed and the texture is creamy, about 15 minutes or more if the quinoa hasn't cooked through.
When finished, mix in the vanilla extract and date sugar or sweetener.
