Ingredients (Serves 8)
- 4 cups of vegan "cheese"
- 2 cups of spinach
- 2 cups of fresh corn kernels
- 2 cups grated zucchini
- 8 spinach tortillas
I use Daiya's vegan cheese which is super tasty! I've kid tested this recipe and turns out they prefer this vegan cheese before regular cheese.
Heat the pan to a high temperature.
Sprinkle 1/8 of each ingredient on tortillas in order of the ingredient list.
When cheese starts to melt, fold the tortilla in half with spatula and heat on each side for one minute each.
Serve with fresh made guacamole and/or salsa or eat it just like it is!
For those of you who don't want to do the vegan option, just switch out the vegan cheese for regular and the spinach tortillas for whole wheat! That's how I originally tested this recipe until I decided to make it vegan earlier this week.
