Simple And Quick Granola
Do you ever walk into the grocery store, pick up a bag of granola and go- "what now?"
First of all, it's ridiculously expensive and jammed pack with sugar.
Second, what is it, like two-three servings in each?
Believe it or not, these two reasons were actually not my reason to start making granola myself...
I've recently aimed to reduce the amount of waste I generate, and a lot of it comes from buying products at the store because of their packaging.
The fact that I get a boat load of granola for like $1.50-2 and with no sugar at all is just a giant plus!
I don't know why I never did it before. I guess I just had this idea that it would be so hard and time consuming?
Well, it's really not.
It only takes like 20-25 minutes and that's just you waiting for the oven, then you store it and you will have it for days or weeks, depending on how much granola you go through. And the perk is that you can add exactly anything you want. Within reason.
TIP!! I enjoy a little bit of chocolaty flavor so I add a little chunk of cacao butter when I melt the coconut oil. It has some health benefits worth looking up, like benefits for your skin as an example!
Part 1 INGREDIENTS
3 cups of rolled oats
1 cup of raw almonds or any other preferred nuts
Part 2 INGREDIENTS
1/2 cup maple syrup
1/4 cup coconut oil
1 tbsp cinnamon
1 tsp vanilla extract
EXTRAS SUGGESTIONS: raisins, cranberries, coconut flakes, hemp seeds, chia seeds.
I would recommend adding extras like this after you have finished the PART 2 section.
Preheat the oven to 350 degrees.
Mix the PART 1 ingredients in a baking dish and toast them in the oven for about 15 minutes, stirring occasionally.
Combine the PART 2 ingredients in a bowl, melting the coconut oil (and potentially cacao butter.)
When the oats are done toasting, take them out of the oven and work the PART 2 ingredients into the oats, mixing them well.
After finished mixing, this is where I would add any extras that you want in your granola.
Place the granola on a baking sheet, spreading it out evenly, put back in the oven and turn the oven off.
This depends on your oven as well, mine cools off really quick so I need it on for a few minutes before turning it off. But if you have a bigger oven, chances are that you can turn the oven off right away to avoid burning the granola.
Let it sit in the oven for about 5-8 minutes. Remove from oven and let it cool, then transfer to a airtight glass jar if possible.
TIP!! I like saving my glass jars from buying honey, jams, etc so I can reuse them in cases like this :))
